We present an easy interpretation of a beverage from our latest drinks list. This is a party-sized pre-mixed which is loaded with the flavours of a Christmas time, which makes it excellent for hosting a celebration. Reserve the remaining citrus syrup you can use for morning drinks, desserts, or to make additional servings of this cocktail.

Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Place all the ingredients into a pan, heat until it reaches a simmer, mixing to dissolve. Next, take off the burner and let it to cool down fully. Pour into a clean bottle, close it and store in the refrigerator, where it will keep for up to one month.
Preparing the Batch Mix: Mix the specified liquid ingredients into a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, so it's fully clarified.
For serving: Pour 85ml from the premix into your cocktail shaker filled with ice, gently stirring gently for about 60 seconds until cold. Strain to a cold coupe glass or equivalent, top with some cranberries and finish by giving it a quick spritz of mandarin oil over the drink.
